Bean’s New Top Chef

Last month we had our Healthy Recipe Contest where associates competed to become Bean’s Top Chef. While there were plenty of delicious healthy meals, there were three that stood out to the judges. In third place tied, Kendall Toyota Service Director, Henry Pinillos “Yellow Pepper Ceviche” and West Kendall Toyota Service Director, Danny Nieves “Turkey Taco Quinoa Skillet.” Both received a professional knife set. Winning a Cuisinart Stand Mixer in second place was Marketing Specialist, Magaly Duarte’s “Gluten-Free Twix Bars” and taking home first place and the “Made-In” Cookware set was Payroll Specialist, Sugerys Batista with her “Oat-Fritters en Escabeche.”

Sugery Batista uses everyday simple ingredients to create a unique recipe of her own. To recreate and try Sugery’s Oat Fritters with Escabeche follow the recipe below!

Recipe:

Ingredients for Oat-Fritters

  • 2 cups of oatmeal
  • 1 cup of grated carrots
  • 1 egg (optional)
  • 1 tablespoon extra virgin olive oil
  • ½ cup of homemade sofrito (garlic, onion, red pepper, green pepper, fresh oregano leaves, cilantro)
  • 1 1/2 tablespoon sea salt
  • ¼ cup of water

Ingredients for the Escabeche

  • 1/3 cup of water
  • 1 green bell pepper, chopped
  • 1 red bell pepper, chopped
  • ½ onion, minced (any of your option)
  • ½ teaspoon turmeric
  • 1 tablespoon sea salt
  • ¼ tomatoes paste
  • 3 tablespoon of oil

Preparation for Fritters

Step 1: In a blender or food processor mix 1/2 cup of homemade sofrito (garlic, onion, red pepper, green pepper, fresh oregano leaves, and cilantro), 1 1/2 tbsp of sea salt, and 1/4 cup of water.

Step 2: In a large bowl, add your blended mix in with the oatmeal and grated carrots. Add salt to taste. Then cover and let it rest for 15-20 minutes.

Step 3: Once the 20 minutes are over, grease the flat grill with 1 tbsp of extra-virgin olive oil. Then, scoop a tablespoon of the mix and place it on the grill. Cook each side for 5-7 minutes.

Preparation for Escabeche

Step 1: In a frying pan add 3 tbsp of oil in medium heat. Then add your green bell pepper, red bell pepper, and minced onion. Stir until onions are translucent but haven’t taken any color.

Step 2: Add water, turmeric, sea salt, tomatoes paste and let it cook for 10 minutes.

Step 3: Place fritter on your plate and pour the escabeche on top!
